The
policy of the company Mac Killop (or should I say Mac Kullick?)
is to bottle from single casks. The selection work is essential
because there can be great taste differences from one cask to another
one after maturing, even if the whisky comes from the same distillation.
Lorne Mackillop selects the casks himself, after having tasted them. Lorne McKillop
has received a title as "Master of Wine" after his studies in oenology.
According to him, about 80% of the casks are rejected. Doing so, he ensures that
the whisky marketed under the label "Mackillop's Choice" represents
the summum of quality.
The selected whiskies are between 12 and 38 years of age, and come from several
distilleries from the different production areas. Lots of them are closed nowadays.
Some whiskies are bottled at 43°, but most of them are cask strength. The
whisky is not chill filtered, and no caramel is added which could modify the
taste or the colour.
There is still a mystery: there is on the market a series called "Mac Kullick's
Choice", marketed by MacKillop. Is this really the same stuff? Mr Mac Kullick
could be a person in charge for the selection for MacKillop. I asked MacKillop
by mail a few weeks ago, and as soon as I get an answer, I'll publish it here
(I'm afraid I'll never get an answer...)
